Pumpkin Roll

3 Eggs - beat for 5 minutes
Add 1 c. sugar - beat then add:
2/3 c. canned pumpkin
3/4 c flour
2 tsp cinnamon
1/2 tsp nutmeg
1 tsp lemon juice
1 tsp baking powder
1 tsp ginger
1/2 tsp salt
Grease and flour sheet cake pan. Cook at 350 degrees for 20 minutes.
Sprinkle powder sugar on cloth then turn out onto the cloth. Roll up.
Filling:
1 pkg cream cheese
1/2 tsp vanilla
1 c. powdered sugar
4 Tbls butter
Mix together. Then spread on cooled, flat cake. Re-roll cake. Store in refrigerator until you are ready to serve.
